Taco Wednesday!

Yeah, I know it’s supposed to be Tuesday but it sounded good for tonight so we went with it.

This is a great recipe from Forks Over Knives and you can find it here if you’re interested in giving it a try.

The soft taco shell is a organic corn shell that you heat in a pan for a little bit to warm it up. The recipe includes black beans, onions, corn, sweet potatoes, cilantro, garlic, cumin, and cayenne pepper seasoning. We like to throw a little turmeric in the mix also. You can also dice up tomatoes with this but we skipped on that tonight. Another nice addition is a bit on lime juice on top after you put it all together.

A great plant based dinner or lunch combination that tastes great!
