Mexican Toasted Rice Soup

I’m down 86 pounds so far! 🙂

Tonight I made Mexican Toasted Rice soup for Charlene for dinner. This was a nice recipe I came across and it came out great. It has fire roasted tomatoes, pinto beans, onions, and a few other tid bits. I’ll post the recipe below if anyone would like to try it.

Toppings:
– Chopped tomato
– Sliced scallions
– Salsa
– Baked tortilla chips
Instructions:
1. In a large saucepan, sauté the onion and garlic in 1 tablespoon low-sodium vegetable stock or water over medium-high heat for 7 minutes.
2. Add the rest of the ingredients, reduce heat to low, and simmer for 25-30 minutes.
3. Season to taste.
4. Serve with toppings of your choice, or the ones listed above.

To toast the rice, put the uncooked grain in a nonstick pan preheated to medium-high and stir constantly for about 5 minutes, or until it is lightly browned.

Doesn’t it look so horrible? I know right. All of this food I made for dinner was all natural plant based and fantastic. We’re loving this lifestyle and we have no regrets in terms of the food or tastes. The health benefits are the best part of this.

I have my Doctor’s appointment coming up next Friday so we’ll see where I am at then.

Creamy Zucchini Soup with Balsamic Glazed Sweet Potato dusted with Cayenne, Cinnamon, Walnuts, & Sriracha

Whew, that was a mouthful! But a very tasty mouthful!

Being that the snow has been falling where we live quite heavily lately (we are close to three feet on the ground already with another 1-2 feet coming later this week) we have been on a soup kick.

Tonight, I made creamy zucchini soup with a side of balsamic glazed sweet potatoes dusted with walnuts, cayenne, cinnamon, and sriracha. It came out very good and we both liked it quite a bit.

Things are going great on a Plant Based Only approach. The many different recipes out there and the different combinations you can come up with guarantee you will not get bored and stuck in a routine.

How do you help a friend?

Being on a Plant Based Diet you not only see, but feel the health benefits of avoiding processed foods, oils, & meat. What do you do when you see a friend or loved one eating greasy fast food or other junk? Do you care enough about them to say something? If so, how?

It can be a touchy subject for sure. While I don’t claim to be an expert my primary training in my career has been verbal communications and teaching. I have graduated from the FBI Hostage Negotiator School and like to think I know how to speak to people. You could offer them some of your meal, but typically the reaction will be to the negative. You are entering into what we call their “personal face”.

I remember when I was eating unhealthy and my usual excuse was I didn’t have time. The “Fast Food” option was legitimate because I didn’t make time to eat properly. I wasn’t allowing time for myself in my day to day life.

Naturally, when you broach the subject with a friend or loved one it can can an issue between you. People tend to take this as a criticism first, and not the true caring aspect that you intend to present to them. I’ve sat at both of my places of employment with individuals I consider friends and watched them put things into their most precious asset (their bodies) that they would be shocked if they truly know what it was doing to them. It’s easy to point that out or to sit here and say it and you even sound hypocritical.

My nature is typically to use humor in my daily life, so this makes it a bit easier. I’ve found if you decide to approach someone during lunch or dinner together it helps to utilize a bit of humor. Typically the person knows they are not eating healthy, but they do not want to be lectured. Instead, pick someone one day and bring extra of yours with you that day. Offer them lunch or let them try some of it. Tell them the day before lunch is on you tomorrow. Pick something they like and use a healthy recipe for it. Cover the bases with them.

Maybe you won’t get everyone. But maybe……just maybe you can help one person.

15 Day Juice Reboot

I decided to hammer out a 15 Day Juice Reboot from Joe Cross’ website Reboot with Joe.

I figured with the holiday approaching it would time out good for me right before Christmas. Not to mention it floods your body with micronutrients and helps the weight loss also. Should be finished on December 21. If you haven’t heard of a juice reboot I would strongly encourage you to visit Joe’s website or pick up his book. Well worth your time! There are Reboot plans from 5 days to 30 days.

Warm Soup on a Cold Night!

Decided to try something a bit different for dinner this evening. Curry & Mushroom soup with a side of Ezekiel bread.

This recipe has mushrooms, celery, onion, minced garlic, coconut milk, and a bit of ginger. It came out really great and this will definitely be a staple this winter.

Things continue to go really well on the Plant Based Only approach!

What a GREAT Dinner!

I’m not really sure what people imagine you eat when you tell them you are only eating a plant based diet, but it typically looks something like what we had tonight.

Tonight, we had toasted Ezekiel bread with avocado, lettuce, and tomato. In addition, we had a small side salad with halo oranges and some lemon slices. This was really, really good.

Since we started a Plant Based Only diet approach at the beginning of September we have had many wonderful dishes. I have eaten foods I have never tried before in my life and have found many new favorites.

Another nice bonus is I never crave any of the older foods I used to eat like chicken wings, greasy cheeseburgers, etc. If you are just starting out with this type of approach I encourage you to stick with it. It get’s better and better each day and eventually you will find that those “old” foods actually disgust you somewhat.
